Scrambled Eggs and Salad ?
INGREDIENTS
2 x Large Eggs
2 x Tbsp Coconut Milk
1 x Large Handful of Parsley
28g Goats Milk Fetta
1 x Cup Mixed Green Lettuce Leaves
30g Avocado
25g Red Capsicum
1/2 Cucumber slices
35 g Mushrooms
35g Kim Chi
Dressing
1/2 Tbsp Balsamic Vinegar
1/2 Tbsp Olive Oil
Coffee
Freshly ground coffee beans
2Tbsp Coconut Milk
METHOD
Beat together the eggs and 2 Tbsp coconut milk and pour into a preheated non-stick pan.
Add the parsley and fetta stirring occasionally till cooked.
Make a salad with the remaining ingredients.
Combine vinegar and oil for dressing.

Freshly ground and brewed with 2 tablespoons of coconut milk. (I am loving the Pureharvest Golden Milk at the moment.) ?

Mince and Veg Cook Up ?
INGREDIENTS
150g Cleavers Beef Mince
1 x Brown Onion – Medium
1 x Zucchini
100g Broccolini
100g Purple Cabbage
35g Mushrooms
28g Brussel Sprouts
1 Cup Rainbow Chard
30g Snowpeas
1/2 Tbsp of Coconut Oil
35g Kim Chi
METHOD
Using a large frypan or wok simply heat the oil over a medium heat till melted then add all ingredients except the Kim Chi.
Gently fry for 20-30 mins.
Serve with 35g Kim Chi
NOTE: This is a LARGE dinner so feel free to have half for lunch and the other half for dinner if that suits you better.
